Willow Tree chicken salad is their classic chicken salad, with a twist. The deli chicken salad is mostly breaded, slightly spicy chicken on white bread with a delicious mayo-based dressing. But, the "twist" was that my lunch included a piece of fruit too. The fruit always sounded strange, since I typically have a bread sandwich and pickle if I am having a sandwich.
I would also get a basket of bread with them, and duck in to the deli every day. I would get a piece of sourdough on the bottom, and then another slice of white bread on top, with the chicken salad, a little beep, and pickles on top. The sourdough bread was the only thing I was not crazy about, but as long as the sourdough was there, I didn't mind. I would get a piece of produce (usually an apple or pear) and a glass of milk, and that was it. It was the perfect way for me to get a healthy lunch with very few ingredients.
Fast forward to a few years. I got pregnant again and was craving chicken salad. I had a craving for it every day. There was no way I was going to eat the typical chicken salad at a deli. I needed a more specific place to get the meal. I ended up going to an organic "co-op" grocery store called Trader Joe's. For once, deli chicken salad didn't appeal to me. I think I sanity kicked in because I read The Bitter Southerner at this point (a must read for every Southern Food author). I decided to try something different and ate a chicken salad at the store. I ended up eating home-made chicken salad hat I mixed up my own dressing, and no bread (not in the entire meal). It was the perfect lunch. d2c66b5586
